Hello friends, it's Vegetarian Times instructor @nutritionsara here to share with you the winter salad that I have eaten three times in the past 48 hours 😍 Here's how: 3 cups Tuscan kale, cleaned, stems removed and chopped, 2 cups roasted butternut squash, 1/4 cup dried cranberries, 1/4 cup toasted pumpkin seeds, 1/4 cup diced red onion, homemade croutons. Place all ingredients in a large bowl and toss with creamy maple balsamic dressing (recipe follows) For dressing: 2 tbsp balsamic vinegar 1 tbsp. Greek yogurt (omit for vegan option) 1 garlic clove Salt to taste 1 tbsp.
